Ingredients
  

  • Main Ingredients:
  • 3–4 boneless skinless chicken breasts or thighs
  • 1 cup long-grain white rice uncooked
  • 1 can cream of chicken soup 10.5 oz
  • 1 ½ cups chicken broth
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 tbsp butter or olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Optional Add-Ins:
  • 1 cup mixed vegetables peas, carrots, or broccoli
  • ¼ cup breadcrumbs or fried onions for topping
  • 1 tbsp fresh parsley or thyme chopped

Instructions
 

  • Preheat Oven: Set your oven to 375°F (190°C) and lightly grease a baking dish with butter or nonstick spray.
  • Mix the Base: In a large bowl, combine uncooked rice, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until evenly blended.
  • Add the Chicken: Place chicken breasts on top of the rice mixture and season with a bit more salt, pepper, and garlic powder.
  • Bake Covered: Cover the dish tightly with foil and bake for 40–45 minutes, until the rice is tender and the chicken is fully cooked.
  • Add Cheese & Finish: Remove foil, sprinkle cheddar and mozzarella on top, and bake uncovered for 10 minutes until bubbly and golden.
  • Rest & Serve: Let the casserole rest for 5 minutes before serving. Garnish with parsley or thyme if desired.

Notes

  • Use uncooked rice for the best fluffy texture.
  • Keep the foil tightly sealed to trap steam and cook rice evenly.
  • Check chicken for doneness (165°F / 75°C internal temperature).
  • Add more broth mid-bake if the mixture looks dry.
  • For extra creaminess, stir in a few tablespoons of sour cream or heavy cream before baking.
