- Main Ingredients:
- 3–4 boneless skinless chicken breasts or thighs
- 1 cup long-grain white rice uncooked
- 1 can cream of chicken soup 10.5 oz
- 1 ½ cups chicken broth
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 1 tbsp butter or olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and black pepper to taste
- Optional Add-Ins:
- 1 cup mixed vegetables peas, carrots, or broccoli
- ¼ cup breadcrumbs or fried onions for topping
- 1 tbsp fresh parsley or thyme chopped
Preheat Oven: Set your oven to 375°F (190°C) and lightly grease a baking dish with butter or nonstick spray.
Mix the Base: In a large bowl, combine uncooked rice, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until evenly blended.
Add the Chicken: Place chicken breasts on top of the rice mixture and season with a bit more salt, pepper, and garlic powder.
Bake Covered: Cover the dish tightly with foil and bake for 40–45 minutes, until the rice is tender and the chicken is fully cooked.
Add Cheese & Finish: Remove foil, sprinkle cheddar and mozzarella on top, and bake uncovered for 10 minutes until bubbly and golden.
Rest & Serve: Let the casserole rest for 5 minutes before serving. Garnish with parsley or thyme if desired.
