Ingredients
  

  • Core Ingredients:
  • 2–3 boneless skinless chicken breasts or 4 chicken thighs
  • 2 cups fresh mushrooms cremini, baby bella, or white button, sliced
  • 2 cloves garlic minced
  • ½ onion finely chopped
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons butter or olive oil
  • 1 teaspoon dried thyme or 1 tablespoon fresh
  • Salt and black pepper to taste
  • Optional Add-ins:
  • ¼ cup grated parmesan cheese
  • A splash of white wine ¼ cup
  • 1–2 cups spinach or chopped kale
  • Red chili flakes to taste
  • ¼ cup sun-dried tomatoes chopped
  • Fresh parsley or thyme for garnish

Instructions
 

  • Prep Ingredients: Slice mushrooms, mince garlic, and chop onion. Halve large chicken breasts for quicker cooking.
  • Sear the Chicken: Heat butter or oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and optional paprika. Sear for 4–5 minutes per side until golden brown. Remove and set aside.
  • Make the Sauce: In the same pan, add a little more butter if needed. Sauté onion and garlic for 1–2 minutes. Add mushrooms and cook until browned and tender. Deglaze with chicken broth (and wine, if using), scraping the bottom of the pan.
  • Add Cream: Stir in heavy cream and thyme. Reduce heat to low and simmer for 5–6 minutes, allowing the sauce to thicken slightly.
  • Return Chicken: Add the chicken back into the skillet. Spoon sauce over top, cover, and simmer for another 5–7 minutes until the chicken is fully cooked through (internal temp of 165°F).
  • Finish & Serve: Taste and adjust seasoning. Garnish with parmesan, fresh herbs, or a squeeze of lemon if desired. Serve hot.

Notes

  • For thicker sauce: Let it simmer longer, or mix 1 tsp cornstarch with 1 tbsp water and stir it in.
  • Lighter version: Use half-and-half instead of heavy cream.
  • Dairy-free: Substitute with coconut cream or cashew cream.
