 This Easy Creamy Sausage Rigatoni is a hearty, restaurant-quality pasta dish made with Italian sausage, heavy cream, Parmesan, and rigatoni. Quick, creamy, and packed with flavor, it’s perfect for weeknight dinners or cozy family meals.

Ingredients
  

  • For the Pasta:
  • 12 oz 340 g rigatoni pasta
  • 1 lb 450 g Italian sausage (mild or spicy)
  • 1 small onion chopped
  • 3–4 garlic cloves minced
  • 1–2 tbsp tomato paste or ½ cup diced tomatoes
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese fresh preferred
  • 1–2 cups fresh spinach optional
  • Olive oil or butter for sautéing
  • Salt and black pepper to taste
  • ½ tsp Italian seasoning or pinch of red pepper flakes
  • Optional Garnishes & Variations:
  • Additional Parmesan cheese for topping
  • Fresh parsley for garnish
  • Mozzarella or fontina cheese for extra creaminess
  • Mushrooms bell peppers, or zucchini for veggie-packed version

Instructions
 

  • Step 1 – Cook the Pasta:
  • Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve about 1 cup of pasta water before draining.
  • Step 2 – Brown the Sausage:
  • In a large skillet, heat olive oil over medium heat. Add sausage, breaking it apart, and cook until browned and crisp on edges.
  • Step 3 – Add Aromatics:
  • Add chopped onion and garlic to the sausage. Sauté until soft and golden, about 3–4 minutes.
  • Step 4 – Build the Sauce:
  • Stir in tomato paste and cook 1 minute. Pour in heavy cream and a splash of reserved pasta water. Stir until sauce thickens slightly. Add Parmesan cheese and let it melt.
  • Step 5 – Combine Pasta and Sauce:
  • Add cooked rigatoni to the skillet and toss until fully coated. Adjust consistency with more pasta water if needed. Add spinach if using, and stir until wilted.
  • Step 6 – Serve:
  • Serve hot, garnished with extra Parmesan, fresh parsley, and a sprinkle of black pepper or red pepper flakes. Pair with garlic bread or a green salad for a complete meal.

Notes

  • Use freshly grated Parmesan for smooth, creamy sauce.
  • Keep pasta al dente to hold sauce better.
  • Reserve pasta water to adjust sauce consistency.
  • Taste before serving; adjust salt or cheese as needed.
