Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 8 oz block cream cheese, cubed
  • 1 15 oz can corn, drained
  • 1 15 oz can black beans, drained and rinsed
  • 1 10 oz can Rotel or salsa
  • 1 packet taco seasoning
  • Optional Add-Ins
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 jalapeño chopped (for heat)
  • Fresh cilantro or lime juice for garnish

Instructions
 

  • 1️⃣ Prep the Ingredients
  • Drain the corn and black beans, cube the cream cheese, and trim the chicken breasts.
  • 2️⃣ Layer in the Slow Cooker
  • Place chicken at the bottom of your slow cooker. Add corn, black beans, salsa (or Rotel), taco seasoning, and cream cheese on top. Don’t stir.
  • 3️⃣ Cook Until Tender
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is cooked through and tender.
  • 4️⃣ Shred & Mix
  • Shred the chicken directly in the slow cooker using two forks. Stir everything together until creamy and well combined.
  • 5️⃣ Serve & Enjoy
  • Serve over rice, in tortillas, or as a dip with chips. Top with shredded cheese, cilantro, or a squeeze of lime if desired.

Notes

  • Use block-style cream cheese for the best texture.
  • If the mixture is too thick, add a splash of milk or chicken broth.
  • For extra flavor, stir in shredded cheese before serving.
