Ingredients
  

  • 12 oz pasta fettuccine, linguine, or similar
  • 1 lb large shrimp peeled and deveined
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • ½ tsp red pepper flakes optional
  • ½ cup sun-dried tomatoes chopped
  • 1 cup chicken broth or part white wine, part broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh basil chopped (optional, for garnish)

Instructions
 

  • Cook pasta according to package directions until al dente. Drain and set aside.
  • Season shrimp with salt and pepper. In a skillet, heat olive oil and cook shrimp 2 minutes per side until pink and opaque. Remove and set aside.
  • In the same skillet, melt butter. Add garlic and red pepper flakes, sauté 1 minute until fragrant.
  • Stir in sun-dried tomatoes, then pour in chicken broth and cream. Simmer gently.
  • Lower heat, add Parmesan, and stir until sauce is smooth and slightly thickened.
  • Return shrimp to the skillet. Add pasta and toss until coated in the sauce.
  • Garnish with fresh basil and serve hot.

Notes

  • Swap shrimp with scallops or chicken for a variation.
  • Stir in spinach, mushrooms, or zucchini for extra veggies.
  • Add Calabrian chili paste or extra red pepper flakes for spice.
  • A squeeze of fresh lemon juice brightens the flavors.
  • Leftovers reheat best on the stove with a splash of cream or broth.
