- 12 oz pasta fettuccine, linguine, or similar
- 1 lb large shrimp peeled and deveined
- Salt and pepper to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic minced
- ½ tsp red pepper flakes optional
- ½ cup sun-dried tomatoes chopped
- 1 cup chicken broth or part white wine, part broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Fresh basil chopped (optional, for garnish)
Cook pasta according to package directions until al dente. Drain and set aside.
Season shrimp with salt and pepper. In a skillet, heat olive oil and cook shrimp 2 minutes per side until pink and opaque. Remove and set aside.
In the same skillet, melt butter. Add garlic and red pepper flakes, sauté 1 minute until fragrant.
Stir in sun-dried tomatoes, then pour in chicken broth and cream. Simmer gently.
Lower heat, add Parmesan, and stir until sauce is smooth and slightly thickened.
Return shrimp to the skillet. Add pasta and toss until coated in the sauce.
Garnish with fresh basil and serve hot.
