- For the Casserole:
- 2 cups cooked shredded chicken rotisserie works perfectly
- 1 cup black beans drained and rinsed (optional)
- 1 cup corn kernels fresh, canned, or frozen
- 1 cup cooked rice white, brown, or cauliflower rice for low-carb
- 1 small red bell pepper diced
- ½ cup chopped onion
- 1 –2 fresh jalapeños finely chopped (optional, for spice)
- 1½ cups shredded cheese cheddar, Monterey Jack, or Mexican blend
- For the Smoky Chipotle Sauce:
- 1 cup crushed tomatoes
- 2 chipotle peppers in adobo finely chopped
- 1 garlic clove minced
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp salt
- 2 tsp fresh lime juice
Step 1 – Preheat Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish to prevent sticking.
Step 2 – Make the Sauce
In a small bowl, combine crushed tomatoes, chipotle peppers, garlic, smoked paprika, cumin, salt, and lime juice. Stir well and set aside.
Step 3 – Mix the Filling
In a large mixing bowl, combine shredded chicken, black beans, corn, rice, bell pepper, onion, and jalapeños (if using). Pour the chipotle sauce over the mixture and stir until everything is evenly coated.
Step 4 – Assemble the Casserole
Spread half of the chicken mixture into the prepared casserole dish. Sprinkle half of the shredded cheese on top. Layer the remaining chicken mixture and top with the rest of the cheese.
Step 5 – Bake
Bake uncovered for 25–30 minutes, or until the cheese is melted, bubbly, and lightly golden. Let it rest for 5 minutes before serving — this helps the casserole set and makes slicing easier.
