  • 1/2 cup Old fashioned rolled oats Not instant oatmeal
  • 1/2 cup Plain Greek yogurt Vanilla can also be used
  • 1/2 cup Milk Dairy or plant-based
  • 1 tablespoon Chia seeds
  • 2 teaspoons Granular monk fruit sweetener
  • 1/4 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1/2 cup Peaches Fresh, frozen or canned
  • 2 tablespoons Walnuts, chopped Optional

Preparation

  • In a mixing bowl, combine old-fashioned rolled oats, chia seeds, and monk fruit sweetener. Mix well so that the chia seeds are evenly distributed.
  • Stir in the Greek yogurt and milk until fully combined to achieve a creamy and smooth mixture.
  • Add the vanilla extract and a pinch of salt to enhance the flavors.
  • Fold in the peaches, ensuring they are evenly distributed.
  • If desired, sprinkle chopped walnuts on top.
  • Cover the bowl or transfer the mixture into jars with lids and refrigerate overnight.

Serving

  • The next morning, give your oats a good stir. Add a splash of milk if you prefer a thinner consistency, and enjoy!

Notes

Overnight oats can be stored in the fridge for up to 3-5 days. Consider creative variations by swapping out fruits or adding nut butters.
