Ingredients
  

  • 2 ½ cups warm water 110°F–115°F
  • 1 packet 2 ¼ teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 4 cups all-purpose flour
  • ½ cup baking soda for boiling water bath
  • 1 egg for egg wash
  • Coarse sea salt for topping
  • Optional Flavor Variations:
  • Cinnamon sugar + melted butter sweet
  • Shredded cheddar or parmesan cheesy
  • Garlic powder + melted butter savory

Instructions
 

  • Make the Dough: In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy. Stir in salt and flour, then knead until smooth (5–7 minutes by hand or mixer). Cover and let rise 1 hour, until doubled.
  • Shape the Pretzel Bites: Punch down dough. Roll into ropes ½-inch thick. Cut into 1-inch pieces.
  • Boil in Baking Soda Bath: Boil water in a large pot and add baking soda. Drop dough pieces in for 30 seconds, then remove.
  • Bake Until Golden: Place boiled bites on a lined baking sheet. Brush with egg wash, sprinkle with coarse salt, and bake at 425°F (220°C) for 12–15 minutes until golden brown.

Notes

  • Use fresh yeast for best rise.
  • Do not skip the baking soda bath it creates the classic pretzel flavor and chew.
  • Double the batch because they disappear quickly!
  • Store leftovers in an airtight container for 2 days, or freeze up to 3 months.
