- For the Carrots:
- 2 lbs carrots peeled and cut into sticks or use baby carrots
- 2 tablespoons unsalted butter or olive oil
- 2 tablespoons honey
- 2 cloves garlic minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional Garnish:
- 1 tablespoon chopped fresh parsley
- 1 teaspoon extra honey for drizzle
- 1 teaspoon lemon juice optional
Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Carrots: Peel and slice carrots into 2-inch sticks (or use baby carrots). Pat dry to remove excess moisture.
Make the Glaze: In a small saucepan, melt the butter (or heat olive oil) over medium heat. Stir in honey and minced garlic until smooth and fragrant.
Toss and Coat: Place carrots in a mixing bowl. Pour the honey-garlic glaze over them and toss until evenly coated. Season with salt and pepper.
Roast: Spread carrots in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway through, until they’re tender and caramelized.
Finish and Serve: Optional — drizzle with a bit more honey or lemon juice, and sprinkle with fresh parsley before serving.
