Ingredients
  

  • For the Carrots:
  • 2 lbs carrots peeled and cut into sticks or use baby carrots
  • 2 tablespoons unsalted butter or olive oil
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional Garnish:
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon extra honey for drizzle
  • 1 teaspoon lemon juice optional

Instructions
 

  • Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the Carrots: Peel and slice carrots into 2-inch sticks (or use baby carrots). Pat dry to remove excess moisture.
  • Make the Glaze: In a small saucepan, melt the butter (or heat olive oil) over medium heat. Stir in honey and minced garlic until smooth and fragrant.
  • Toss and Coat: Place carrots in a mixing bowl. Pour the honey-garlic glaze over them and toss until evenly coated. Season with salt and pepper.
  • Roast: Spread carrots in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway through, until they’re tender and caramelized.
  • Finish and Serve: Optional — drizzle with a bit more honey or lemon juice, and sprinkle with fresh parsley before serving.

Notes

  • Don’t overcrowd the pan it prevents browning.
  • Add a pinch of chili flakes or smoked paprika for a spicy kick.
  • Substitute maple syrup for honey for a richer flavor.
  • Broil for 2–3 minutes at the end for deeper caramelization.
  • Store leftovers in an airtight container for up to 4 days.
