Ingredients
  

  • Dry Ingredients
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • Wet Ingredients
  • 1 cup unsweetened applesauce
  • ¾ cup brown sugar
  • ¼ cup coconut oil or vegetable oil
  • 1 teaspoon vanilla extract
  • Optional Add-Ins
  • ½ cup chopped walnuts or pecans
  • ½ cup raisins dried cranberries, or vegan chocolate chips

Instructions
 

  • Preheat Oven:
  • Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line with parchment paper.
  • Mix Wet Ingredients:
  • In a large mixing bowl, whisk together applesauce, brown sugar, oil, and vanilla extract until smooth.
  • Combine Dry Ingredients:
  • In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Mix Batter:
  • Add the dry ingredients to the wet mixture. Stir gently until just combined. Do not overmix.
  • Fold in nuts, dried fruit, or chocolate chips if using.
  • Bake:
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool and Serve:
  • Let the cake cool completely before slicing. The texture improves as it cools.

  • Measure flour accurately to prevent dryness.
  • Use unsweetened applesauce for balanced sweetness.
  • Don’t overbake remove once the center sets.
  • Substitute mashed bananas for applesauce for a banana-spice twist.
