Ingredients
  

  • 2 cups fresh pineapple chunks
  • 1 ½ cups plain Greek yogurt
  • cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Optional Toppings
  • Shredded coconut
  • Chopped pineapple pieces
  • Granola or chopped nuts

Instructions
 

  • Peel, core, and cut the pineapple into small chunks.
  • (Optional) Freeze the pineapple pieces for about 1 hour to help create a thicker frozen yogurt texture.
  • Add the pineapple, Greek yogurt, honey or maple syrup, vanilla extract, lemon juice, and salt to a blender or food processor.
  • Blend until the mixture becomes smooth and creamy.
  • Taste and adjust sweetness by adding a little more honey if desired.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until thick and creamy.
  • Without an Ice Cream Maker
  • Pour the mixture into a freezer-safe container.
  • Freeze for 2–3 hours, stirring every 30 minutes to break up ice crystals and keep the texture smooth.
  • When ready to serve, let the frozen yogurt sit at room temperature for 3–5 minutes for easier scooping.
