- 8 rice paper wrappers
- 1 cup strawberries sliced
- 1 cup mango thinly sliced
- 1 kiwi peeled and sliced
- 1 banana sliced
- Dipping Sauce
- ½ cup vanilla yogurt
- 1 tablespoon honey
- ½ teaspoon vanilla extract
- Optional Add-ins
- Coconut flakes
- Granola
- Chia seeds
Prepare all fruits by washing, peeling (if needed), and slicing them into thin strips or small pieces.
Fill a shallow bowl with warm water.
Dip one rice paper wrapper into the water for 5–10 seconds until soft and flexible.
Carefully remove the wrapper and place it on a clean cutting board or plate.
Arrange a few slices of fruit across the center of the wrapper in colorful rows.
Fold the bottom edge of the wrapper over the fruit.
Fold the sides inward, then roll the wrapper gently but tightly to form a spring roll.
