Ingredients
  

  • 2 cups whole milk
  • ½ cup heavy cream
  • cup unsweetened cocoa powder
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons water for cornstarch slurry
  • Optional Toppings
  • Crushed nuts
  • Chocolate chips
  • Coconut flakes
  • Caramel drizzle

Instructions
 

  • In a small bowl, mix cornstarch and water until smooth to create a slurry. Set aside.
  • In a saucepan combine:
  • Whole milk
  • Heavy cream
  • Cocoa powder
  • Sugar
  • Salt
  • Heat over medium heat, whisking constantly until the cocoa powder dissolves and the mixture becomes smooth.
  • Bring the mixture to a gentle simmer.
  • Slowly stir in the cornstarch slurry, whisking continuously.
  • Cook for 2–3 minutes until the mixture thickens slightly and becomes glossy.
  • Remove from heat and stir in the vanilla extract.
  • Allow the chocolate mixture to cool for about 10 minutes.
  • Pour the mixture into popsicle molds.
  • Insert popsicle sticks and freeze for at least 6 hours, or until fully solid.
  • To remove, run the molds briefly under warm water to release the popsicles easily.

  • Cornstarch helps create a creamy texture instead of icy popsicles.
  • Whisk continuously while heating to avoid lumps.
