- 2 cups whole milk
- ½ cup heavy cream
- ⅓ cup unsweetened cocoa powder
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon cornstarch
- 2 tablespoons water for cornstarch slurry

In a small bowl, mix cornstarch and water until smooth to create a slurry. Set aside.
In a saucepan combine:
Whole milk
Heavy cream
Cocoa powder
Sugar
Salt
Heat over medium heat, whisking constantly until the cocoa powder dissolves and the mixture becomes smooth.
Bring the mixture to a gentle simmer.
Slowly stir in the cornstarch slurry, whisking continuously.
Cook for 2–3 minutes until the mixture thickens slightly and becomes glossy.
Remove from heat and stir in the vanilla extract.
Allow the chocolate mixture to cool for about 10 minutes.
Pour the mixture into popsicle molds.
Insert popsicle sticks and freeze for at least 6 hours, or until fully solid.
To remove, run the molds briefly under warm water to release the popsicles easily.
