Ingredients
  

  • 2 carrots sliced
  • 1 zucchini chopped
  • 1 red bell pepper chopped
  • 1 red onion cut into wedges
  • 1 1/2 cups broccoli florets
  • 2–3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried rosemary or 1 tbsp fresh
  • 1 tsp dried thyme or 1 tbsp fresh
  • 1 tsp dried oregano or 1 tbsp fresh
  • Salt to taste
  • Black pepper to taste
  • Lemon juice optional, for finishing

Instructions
 

  • Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  • Place prepared vegetables in a large bowl.
  • Drizzle with olive oil, add minced garlic, herbs, salt, and pepper. Toss to coat evenly.
  • Spread vegetables in a single layer on the baking sheet without crowding.
  • Roast for 25–30 minutes, stirring halfway through, until veggies are golden and tender.
  • (Optional) Finish with a squeeze of fresh lemon juice before serving.
