  • cups cottage cheese full-fat or low-fat, small curd preferred
  • 1 cup fresh herbs parsley, basil, chives, dill – any mix
  • 1 cup spinach or mixed greens
  • Flavor Base & Enhancers
  • 1 small clove garlic
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • ½ teaspoon anchovy paste optional, for classic green goddess flavor
  • Pantry Staples
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Prep
  • Wash and dry herbs and greens thoroughly.
  • Roughly chop herbs for easier blending.
  • Juice lemon and mince garlic.
  • Blend
  • Add cottage cheese, herbs, greens, garlic, lemon juice, olive oil, salt, pepper, and anchovy paste (if using) to a food processor or high-speed blender.
  • Blend for 1–2 minutes, scraping down sides as needed.
  • Adjust & Finish
  • Continue blending until completely smooth and bright green.
  • Taste and adjust seasoning or lemon juice as needed.
  • Serve
  • Transfer to a bowl and serve immediately, or chill for 10–15 minutes for flavors to meld.

Notes

  • Blend thoroughly—cottage cheese needs time to become silky smooth.
  • Lemon juice is essential for balance and brightness.
  • If too thick, blend in 1 tablespoon water or olive oil at a time.
