Ingredients
  

  • 1 medium zucchini sliced lengthwise
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika optional
  • 2 large whole wheat tortillas
  • ½ cup hummus
  • ½ cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • 1 cup fresh spinach or arugula
  • Squeeze of fresh lemon juice optional
  • Feta cheese optional

Instructions
 

  • Prep
  • Preheat grill pan or outdoor grill to medium heat.
  • Brush zucchini slices with olive oil.
  • Sprinkle with salt, pepper, and smoked paprika.
  • Grill the Zucchini
  • Place zucchini slices on the grill.
  • Cook for 3–4 minutes per side, until tender and lightly charred.
  • Remove from heat and let cool slightly.
  • Assemble the Wrap
  • Lay tortillas flat.
  • Spread an even layer of hummus over each tortilla.
  • Add grilled zucchini slices.
  • Top with spinach, cherry tomatoes, and red onion.
  • Add lemon juice or feta if desired.
  • Roll
  • Fold in the sides of the tortilla.
  • Roll tightly from bottom to top.
  • Slice in half before serving.
  • Optional Toast
  • Place wrapped tortilla seam-side down on grill pan.
  • Toast for 1–2 minutes per side until lightly crisp.

Notes

  • Pat zucchini dry before grilling to prevent sogginess.
  • Warm tortillas slightly to prevent tearing.
  • Store wrapped tightly in foil up to 2 days in refrigerator.
  • Not ideal for freezing due to fresh vegetables.
  • Add grilled chicken, chickpeas, or tofu for extra protein.
