Main Ingredients

  • 2 medium zucchinis Choose firm, smooth zucchinis.
  • 3 oz goat cheese Crumble over grilled zucchini.
  • 2 tbsp fresh basil, chopped For garnish and added flavor.
  • 2 tbsp honey Drizzle over grilled zucchini.
  • to taste olive oil For drizzling over zucchini.
  • to taste salt For seasoning.
  • to taste pepper For seasoning.

Instructions
 

Preparation

  • Wash the zucchinis thoroughly and slice them lengthwise into 1/4-inch thick strips.
  • Drizzle zucchini slices with olive oil and sprinkle with salt and pepper.

Grilling

  • Preheat the grill (or grill pan) to medium-high.
  • Cook zucchini slices on the grill for 3-4 minutes on each side until tender and grill marks appear.

Serving

  • Transfer grilled zucchini to a serving platter and crumble goat cheese over the hot zucchini.
  • Drizzle honey over the zucchini and top with chopped basil.
  • Serve warm or at room temperature.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat lightly in a skillet or enjoy cold in salads.
