Guasacaca (Venezuelan Avocado Sauce) is a creamy, vibrant green sauce made with ripe avocado, fresh cilantro, lime juice, garlic, and olive oil. This traditional Venezuelan condiment is smooth, tangy, and incredibly versatile—perfect as a dip, dressing, or topping for grilled meats, arepas, vegetables, and sandwiches.

- 1 ripe avocado
- ½ small onion chopped
- 1 small green bell pepper chopped
- 1 garlic clove
- ¼ cup fresh cilantro
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- ¼ cup water adjust as needed
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional
- ½ jalapeño pepper for spice
Slice the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
Add the following ingredients:
Chopped onion
Chopped green bell pepper
Garlic clove
Fresh cilantro
Pour in the lime juice and olive oil.
Add ¼ cup water to help the ingredients blend smoothly.
Blend until the mixture becomes smooth, creamy, and slightly pourable.
Taste the sauce and add salt and black pepper.
If the sauce is too thick, add a little more water and blend again until you reach the desired consistency.
Transfer the sauce to a serving bowl and serve immediately.
