Guasacaca (Venezuelan Avocado Sauce) is a creamy, vibrant green sauce made with ripe avocado, fresh cilantro, lime juice, garlic, and olive oil. This traditional Venezuelan condiment is smooth, tangy, and incredibly versatile—perfect as a dip, dressing, or topping for grilled meats, arepas, vegetables, and sandwiches.

Ingredients
  

  • 1 ripe avocado
  • ½ small onion chopped
  • 1 small green bell pepper chopped
  • 1 garlic clove
  • ¼ cup fresh cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • ¼ cup water adjust as needed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional
  • ½ jalapeño pepper for spice

Instructions
 

  • Slice the avocado in half, remove the pit, and scoop the flesh into a blender or food processor.
  • Add the following ingredients:
  • Chopped onion
  • Chopped green bell pepper
  • Garlic clove
  • Fresh cilantro
  • Pour in the lime juice and olive oil.
  • Add ¼ cup water to help the ingredients blend smoothly.
  • Blend until the mixture becomes smooth, creamy, and slightly pourable.
  • Taste the sauce and add salt and black pepper.
  • If the sauce is too thick, add a little more water and blend again until you reach the desired consistency.
  • Transfer the sauce to a serving bowl and serve immediately.

Notes

  • Use ripe but firm avocados for the best texture.
  • Lime juice helps keep the sauce bright green and fresh.
  • Adjust the water gradually to achieve the perfect pourable consistency.
  • For extra heat, blend in jalapeño or chili pepper.
