Healthy Zucchini Fritters are crispy, golden, and packed with flavor while staying light and nutritious. Made with fresh zucchini, garlic, and herbs, these fritters are the perfect guilt-free snack, appetizer, or side dish that’s easy to make in under 30 minutes.

Ingredients
  

  • 2 medium zucchinis grated and drained
  • 1 large egg or flax egg for vegan option
  • ¼ cup whole wheat flour or almond flour for gluten-free
  • 2 cloves garlic minced
  • 2 tablespoons chopped onion or scallions
  • Fresh parsley or dill optional
  • Salt and black pepper to taste
  • 2–3 tablespoons olive oil or avocado oil for frying
  • Optional add-ins: grated parmesan feta cheese, or smoked paprik

Instructions
 

  • Grate the zucchini, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid.
  • In a bowl, mix drained zucchini, egg, flour, garlic, onion, herbs, salt, and pepper. Add optional cheese or spices if desired.
  • Heat olive oil in a skillet over medium heat.
  • Scoop spoonfuls of the mixture, flatten slightly, and cook 3–4 minutes per side until golden and crispy.
  • Serve hot with yogurt dip, tzatziki, or salsa.

Notes

  • Drain zucchini thoroughly to avoid soggy fritters.
  • For baking: cook at 200°C (400°F) for 15–20 minutes, flipping halfway.
  • Store leftovers in the fridge (3–4 days) or freeze up to 1 month. Reheat in oven or air fryer for crispiness.
  • Make bite-sized fritters for kids.
