Ingredients
  

  • Dry Ingredients:
  • 2 cups rolled oats blended into oat flour
  • tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • Pinch of sea salt
  • Wet Ingredients:
  • 2 large eggs or 2 flax eggs for vegan
  • 1 cup grated carrots finely grated
  • ½ cup Greek yogurt or coconut yogurt
  • cup honey or maple syrup
  • 1 tsp vanilla extract
  • Optional Add-ins:
  • ¼ cup chopped walnuts or pecans
  • 2 tbsp raisins or shredded coconut
  • 1 tbsp olive oil or melted coconut oil for extra moisture

Instructions
 

  • Preheat Oven: Set your oven to 350°F (175°C). Grease or line an 8-inch baking pan with parchment paper.
  • Make Oat Flour: Blend oats into a coarse flour using a blender or food processor.
  • Mix Wet Ingredients: In a large bowl, whisk together eggs, yogurt, honey, and vanilla until smooth.
  • Combine Dry Ingredients: Add oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir until just combined.
  • Fold in Carrots: Gently mix in grated carrots and any optional add-ins like nuts or raisins.
  • Bake: Pour batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool & Serve: Let it cool completely before slicing or topping with your favorite frosting.
