- For the Strawberry Filling:
- 2 cups fresh or frozen strawberries chopped
- 2–3 tablespoons honey or maple syrup adjust to taste
- For the Oat Base and Crumble Topping:
- 1 ½ cups rolled oats
- ¾ cup whole wheat flour or gluten-free flour blend
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ⅓ cup honey or maple syrup
- ⅓ cup coconut oil or melted butter
- ½ teaspoon vanilla extract optional
- Optional Add-ins:
- 1 tablespoon chia seeds or flaxseeds
- ¼ cup chopped nuts e.g., almonds, walnuts, pecans
- ½ teaspoon ground cinnamon
Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
Make the strawberry filling: In a saucepan, combine strawberries and honey/maple syrup. Cook over medium heat for 10–15 minutes, stirring frequently, until it thickens into a jam-like consistency. Let it cool slightly.
