- 1.5–2 lbs stew beef or chuck roast cut into bite-sized pieces
- 2 tbsp olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 3 carrots sliced
- 2 celery stalks chopped
- 2 medium potatoes diced
- 1 cup green beans trimmed and cut
- 1 cup corn kernels fresh, canned, or frozen
- 1 14.5 oz can diced tomatoes
- 6 cups beef broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt to taste
- Black pepper to taste
- Fresh parsley optional, for garnish
Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches and set aside.
In the same pot, sauté onion, carrots, and celery until softened.
Add garlic and cook for 1 minute.
Return beef to the pot. Add diced tomatoes, beef broth, bay leaves, thyme, salt, and pepper.
Bring to a boil, then reduce heat, cover, and simmer for 45–60 minutes, until beef is tender.
Add potatoes, green beans, and corn. Simmer uncovered for 20–25 more minutes, until vegetables are cooked through.
Remove bay leaves. Adjust seasoning to taste.
Serve hot, garnished with fresh parsley if desired.
