Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

  • Wet Ingredients:
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup buttermilk
  • Mix-ins & Toppings:
  • ½ cup rainbow sprinkles plus more for topping
  • Optional Add-ins:
  • A pinch of cinnamon or nutmeg
  • ¼ cup white chocolate chips for extra sweetness

Instructions
 

  • Step 1: Prep the Oven and Pan
  • Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan with parchment paper.
  • Step 2: Mix Dry Ingredients
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  • Step 3: Cream Butter and Sugar
  • In a large mixing bowl, beat butter and sugar together until light and fluffy.
  • Step 4: Add Eggs and Vanilla
  • Beat in eggs one at a time, then mix in vanilla extract until smooth.
  • Step 5: Combine Wet and Dry Ingredients
  • Alternate adding the dry mixture and buttermilk, starting and ending with the dry ingredients. Mix until just combined — don’t overmix.
  • Step 6: Fold in Sprinkles
  • Gently fold in sprinkles. Avoid over-stirring to keep the colors vibrant.
  • Step 7: Bake
  • Pour batter into prepared pan and top with extra sprinkles.
  • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Step 8: Cool and Serve
  • Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice once completely cooled.
