Ingredients
  

  • 1 lb lean ground beef
  • 2 cups elbow macaroni or small shells/rotini
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 cup milk or heavy cream
  • 2 tbsp tomato paste
  • 1 ½ cups shredded cheddar cheese or Colby Jack/Monterey Jack
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp salt or to taste
  • ½ tsp black pepper
  • ¼ tsp cayenne optional for heat
  • 1 tbsp olive oil or butter
  • Optional Add-Ins:
  • 1 cup diced bell peppers or mushrooms
  • ½ cup frozen peas or carrots
  • 1 handful spinach or kale chopped
  • 1 tsp Worcestershire sauce for depth

Instructions
 

  • Brown the Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  • Add Aromatics: Stir in diced onion and minced garlic. Cook 2–3 minutes until fragrant.
  • Season and Build Base: Add tomato paste, paprika, garlic powder, onion powder, salt, pepper, and cayenne. Stir well to coat.
  • Add Liquids and Pasta: Pour in beef broth and milk, then stir in uncooked pasta. Bring to a gentle boil.
  • Simmer: Reduce heat, cover, and let simmer 12–15 minutes until pasta is tender and most liquid is absorbed.
  • Make It Creamy: Turn off heat and slowly stir in cheese until melted and smooth.
  • Serve: Garnish with parsley or extra cheese. Serve hot with salad or garlic bread.
