Ingredients
  

Marshmallow Base

  • 3 tablespoons gelatin Ensure it’s fresh for optimal fluffiness.
  • 1/2 cup honey Can substitute with maple syrup or agave nectar.
  • 1 cup water Divided into two portions for blooming gelatin and making syrup.
  • 1 teaspoon vanilla extract For flavor enhancement.

Preparation

  • Line your 8x8-inch baking pan with parchment paper for easy removal.
  • In a mixing bowl, combine the gelatin with half of the water. Let it sit and bloom.

Cooking

  • In a saucepan, combine the remaining water and honey. Heat over medium until rolling boil and reaches about 240°F (soft-ball stage).
  • Carefully pour the syrup into the bowl with bloomed gelatin. Use an electric mixer to whip on high until thick and frothy (about 8-10 minutes).
  • Once fluffy, add the vanilla extract and whip for another minute until combined.
  • Pour the marshmallow mixture into the prepared baking pan and smooth it out. Let it set at room temperature for about 4 hours.

Finishing Touches

  • Dust a clean surface with powdered sugar, invert the pan to release marshmallows, cut into squares, and dust with more powdered sugar to prevent sticking.

Notes

Store marshmallows in an airtight container at room temperature for up to two weeks. They can also be frozen if well packed.
