Total Time 25 minutes mins
- For the Vegetables:
- 3 cups carrots peeled and sliced
- 3 cups green beans trimmed and blanched
- 2 tablespoons butter
- 2 tablespoons honey
- 2 cloves garlic minced
- Salt & black pepper to taste
- Optional Add-Ons:
- 1 teaspoon fresh lemon juice
- 2 tablespoons toasted almonds or pecans
- Red pepper flakes for a mild kick
- Fresh parsley or thyme for garnish
Prep the Vegetables:
Peel and slice carrots into even pieces. Trim green beans and blanch in boiling salted water for 2–3 minutes. Transfer to an ice bath to maintain color and crispness.
Make the Honey Glaze:
In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Stir in honey, salt, and pepper; let it simmer 1–2 minutes until slightly thickened.
Combine and Cook:
Add carrots first and sauté in the glaze for 3–5 minutes until slightly tender. Toss in the blanched green beans and stir to coat evenly. Continue cooking 3–5 minutes until vegetables are glazed and glossy.
Serve:
Transfer to a serving dish, drizzle with remaining glaze, and garnish with optional almonds, herbs, or a squeeze of lemon. Serve immediately.
-
Don’t overcook vegetables; carrots should be tender but green beans stay crisp.
-
Swap honey for maple syrup for a richer sweetness.
-
Make ahead by prepping vegetables and glaze separately; combine before serving.
-
Store leftovers in a sealed container for up to 3 days; reheat gently in a skillet.
