Step 1: Marinate the Chicken
In a bowl, whisk together honey, lime juice, olive oil, garlic, salt, pepper, and chili powder.
Add chicken and coat thoroughly.
Marinate in the refrigerator for at least 30 minutes (up to 4 hours).
Step 2: Cook the Rice
Rinse rice under cold water until water runs clear.
Cook according to package instructions.
Fluff with a fork and set aside.
Step 3: Cook the Chicken
Heat a skillet over medium heat.
Remove chicken from marinade (reserve marinade).
Cook 5–7 minutes per side, until internal temperature reaches 165°F (74°C).
In the last minute, add reserved marinade to the pan and let simmer slightly to create a glaze.
Remove chicken and let rest 5 minutes before slicing.
Step 4: Assemble the Stack
If using a ring mold, place it on a serving plate.
Add a layer of rice and gently press down.
Add diced avocado.
Layer sliced honey lime chicken.
Top with tomatoes, red onion, and cilantro.
Carefully remove mold.
Repeat for additional servings.
