  • ½ cup popcorn kernels about 8 cups popped
  • ½ cup 1 stick butter
  • 1 cup brown sugar packed
  • ¼ cup light corn syrup or honey
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tsp vanilla extract

Instructions
 

  • Pop the popcorn using an air popper or stovetop method. Discard any unpopped kernels and place the popcorn in a large mixing bowl.
  • In a medium saucepan over medium heat, melt the butter.
  • Stir in brown sugar, corn syrup, and salt. Bring to a gentle boil, stirring constantly.
  • Let the mixture simmer without stirring for 4–5 minutes to develop the caramel flavor.
  • Remove from heat and stir in baking soda and vanilla extract. The mixture will foam slightly.
  • Immediately pour the caramel over the popcorn and stir quickly to coat evenly.
  • Spread the coated popcorn onto a parchment-lined baking sheet.
  • Allow it to cool completely, then break into clusters and serve.
