Ingredients
  

  • For the Pie:
  • 4 large eggs
  • 2 cups whole milk or 2% milk
  • ½ cup all-purpose flour
  • ½ cup melted butter
  • ¾ cup sugar
  • 1 cup shredded coconut sweetened or unsweetened
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional Add-Ons & Variations:
  • Crushed pineapple or lime zest for a tropical twist
  • Chopped almonds or pecans for a nutty topping
  • Mini chocolate chips or melted chocolate drizzle for chocolate lovers
  • Powdered sugar whipped cream, or vanilla ice cream for serving

Instructions
 

  • Step 1 – Prep Oven and Dish:
  • Preheat oven to 350°F (175°C). Lightly butter or spray a 9-inch pie plate to prevent sticking.
  • Step 2 – Combine Ingredients:
  • In a large bowl or blender, mix eggs, milk, flour, melted butter, sugar, shredded coconut, vanilla, and salt until smooth. Blend for a silky, lump-free custard.
  • Step 3 – Pour and Bake:
  • Pour mixture into the prepared pie dish. Bake 45–55 minutes until the top is golden and center is set but slightly wobbly.
  • Step 4 – Cool and Serve:
  • Allow the pie to cool at room temperature. Serve warm or chill for a firmer custard texture. Garnish as desired.

Notes

  • Use room temperature ingredients for even baking
  • Don’t overbake; a slight jiggle in the center is perfect
  • Let pie rest to firm up and develop flavor
  • Store leftovers in the fridge up to 4 days
