- 2 cups broccoli florets steamed and finely chopped
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup grated parmesan cheese
- 2 large eggs
- ¾ cup breadcrumbs panko preferred
- 1 tbsp all-purpose flour
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper to taste
- Optional: 1 tbsp chopped fresh parsley or oregano
- Cooking spray for baking
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly spray with cooking oil.
Steam broccoli until tender, then drain thoroughly and chop finely.
In a large bowl, mix chopped broccoli, cheeses, breadcrumbs, eggs, flour, garlic powder, onion powder, herbs (if using), salt, and pepper. Mix until fully combined.
Chill mixture for 10–15 minutes for easier shaping.
Using a tablespoon or small scoop, form the mixture into balls. Wet your hands slightly to prevent sticking.
Arrange on the baking sheet and lightly spray with oil.
Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
Serve hot with your favorite dipping sauce.
