- ½ cup 1 stick unsalted butter, melted
- 1 cup all-purpose flour
- 1 cup granulated sugar plus 2–3 tbsp extra for sprinkling
- 1 tbsp baking powder
- ¼ tsp salt
- 1 cup milk whole or 2%
- ½ cup freshly squeezed lemon juice about 2–3 lemons
- 1 tbsp lemon zest
- 1 tsp vanilla extract optional
- Optional Additions:
- ½ tsp cinnamon or nutmeg for warmth
- ½ cup fresh blueberries or raspberries for a fruity twist
Preheat & Prep:
Preheat your oven to 350°F (175°C). Pour melted butter into a 9x9-inch baking dish — do not stir.
Mix the Batter:
In a bowl, whisk together flour, sugar, baking powder, milk, and salt until smooth. Pour the batter over the melted butter (do not mix).
Add the Lemon Mixture:
In another bowl, combine lemon juice, zest, and 2–3 tablespoons of sugar. Spoon this mixture evenly over the batter — again, do not stir.
Bake:
Bake for 35–40 minutes, or until the top is golden brown and bubbling around the edges.
Cool & Serve:
