Ingredients
  

  • For the Cupcakes:
  • 1 cup all-purpose flour
  • 2 tbsp cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tbsp red food coloring
  • For the Lava Filling:
  • 4 oz high-quality dark chocolate chopped
  • 2 tbsp heavy cream
  • Optional Toppings:
  • Cream cheese frosting swirl
  • Powdered sugar dusting
  • Fresh berries or chocolate shavings

Instructions
 

  • Melt chocolate with heavy cream until smooth, then freeze in small molds or spooned dollops until firm.
  • Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  • Mix flour, cocoa powder, baking soda, and salt in a bowl.
  • In another bowl, cream butter and sugar until fluffy. Add egg, vanilla, and food coloring.
  • Alternate mixing dry ingredients with buttermilk until combined. Stir in vinegar.
  • Spoon half the batter into each liner, add one frozen chocolate center, and cover with remaining batter.
  • Bake for 18–20 minutes, until tops are set but centers remain gooey.
  • Let cool slightly, then top with cream cheese frosting, powdered sugar, or berries.

Notes

  • Don’t overbake or you’ll lose the lava effect.
  • Use high-quality chocolate for best flavor.
  • Buttermilk gives the cupcakes their signature red velvet texture substitute by mixing milk with vinegar or lemon juice if needed.
