Ingredients
  

  • Core Ingredients
  • 1 lb ground beef or Italian sausage
  • 1 onion chopped
  • 3 garlic cloves minced
  • 2 tbsp tomato paste
  • 1 can 28 oz crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 6 –8 lasagna noodles broken into pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp thyme
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • Optional Add-Ins
  • 1 cup spinach or kale
  • ¼ tsp red pepper flakes
  • ¼ cup heavy cream for a richer soup

Instructions
 

  • Brown the Meat:
  • In a large pot, cook ground beef or sausage over medium heat until browned. Drain excess fat. Add onion and garlic; cook until fragrant.
  • Build the Broth:
  • Stir in tomato paste, crushed tomatoes, broth, and Italian herbs. Season with salt and pepper. Simmer for 10 minutes.
  • Add the Pasta:
  • Break lasagna noodles into bite-sized pieces and add them to the pot. Cook until tender, about 10 minutes.
  • Add Cheese:
  • Stir in ricotta or top each bowl with mozzarella and Parmesan just before serving.
  • Serve:
  • Garnish with basil, chili flakes, or a drizzle of olive oil. Pair with garlic bread or salad for the perfect meal.

Notes

 Use rich broth for the best flavor
Add cheese just before serving to keep it creamy
Store noodles separately if making ahead
Freeze the soup base (without pasta) for up to 2 months
