- Main Ingredients:
- 1 lb chicken breast or thighs cut into bite-sized pieces
- 2 medium zucchinis sliced into half-moons
- 1 bell pepper any color, diced
- 1 small onion diced
- 2 garlic cloves minced
- 1 cup diced tomatoes or salsa
- 1 cup shredded cheese cheddar or Mexican blend
- 1–2 tbsp olive oil
- Tex-Mex Seasoning Mix:
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp dried oregano
- Salt and black pepper to taste
- Optional: pinch of cayenne for heat
- Optional Toppings:
- Fresh cilantro
- Sliced avocado
- Lime wedges
- Sour cream or Greek yogurt
- Jalapeño slices
Prep Ingredients:
Slice zucchini, dice peppers and onion, and cut chicken into bite-sized pieces.
Cook Chicken:
Heat olive oil in a large skillet over medium heat. Add chicken and season with Tex-Mex spices. Sear until golden brown and cooked through, then remove and set aside.
Sauté Vegetables:
