  • Optional Extra vegetables — carrots, brussels sprouts, or green beans

Instructions
 

  • Prep the Ingredients:
  • Preheat oven to 400°F (200°C).
  • Cube sweet potatoes evenly for consistent roasting.
  • Season chicken with salt, pepper, garlic powder, and smoked paprika if using.
  • Make the Maple Glaze:
  • In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, and soy sauce or balsamic vinegar (if desired).
  • Assemble the Sheet Pan:
  • Toss sweet potatoes with olive oil, salt, pepper, and herbs. Spread evenly on a large baking sheet.
  • Arrange chicken on the same pan (or in a separate dish if preferred).
  • Brush maple glaze generously over chicken.
  • Roast:
  • Bake for 25–30 minutes, or until chicken reaches 165°F (74°C) and sweet potatoes are tender.
  • (Optional) Baste chicken halfway through with extra glaze for more flavor and shine.
  • Rest & Serve:
