Prep the Ingredients:
Preheat oven to 400°F (200°C).
Cube sweet potatoes evenly for consistent roasting.
Season chicken with salt, pepper, garlic powder, and smoked paprika if using.
Make the Maple Glaze:
In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, and soy sauce or balsamic vinegar (if desired).
Assemble the Sheet Pan:
Toss sweet potatoes with olive oil, salt, pepper, and herbs. Spread evenly on a large baking sheet.
Arrange chicken on the same pan (or in a separate dish if preferred).
Brush maple glaze generously over chicken.
Roast:
Bake for 25–30 minutes, or until chicken reaches 165°F (74°C) and sweet potatoes are tender.
(Optional) Baste chicken halfway through with extra glaze for more flavor and shine.
Rest & Serve:
