Ingredients
  

For the cookies

  • 11 tablespoons unsalted butter (room temperature)
  • 1/4 cup powdered sugar
  • 1/4 cup maple sugar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon maple extract
  • 1.5 cups all-purpose flour
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt

For the filling

  • 1/4 cup unsalted butter (room temperature)
  • 1 cup powdered sugar
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • In a mixing bowl, cream together the unsalted butter, powdered sugar, and maple sugar until fluffy. Add the maple syrup and maple extract, mixing until combined.
  • In another bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add the dry mixture to the wet mixture until just combined.
  • Shape the dough into disks, wrap in plastic, and refrigerate for at least one hour.

Baking

  • Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about 1/4 inch thick. Use a maple leaf cookie cutter to cut out shapes.
  • Place the cookies on a parchment-lined baking sheet and bake for 8-10 minutes, until lightly golden. Allow them to cool completely.

Filling Preparation

  • In a bowl, beat together the room-temperature butter and powdered sugar. Add the maple syrup, vanilla extract, maple extract, and salt, beating until smooth.

Assembly

  • Spread a generous amount of the cream filling on the bottom of one cookie, then sandwich it with another, pressing down gently.
  • Once all cookies are filled, they’re ready to be served. Store them in an airtight container to maintain freshness.

Notes

For best flavor, serve fresh but allow them to sit for a few hours after baking for the flavors to meld together beautifully.
