Ingredients

Pasta Ingredients

  • 8 oz Fettuccine, linguine, or spaghetti Any of these pasta types work well.

Main Ingredients

  • 1 lb Shrimp, peeled and deveined Fresh or frozen shrimp can be used.
  • 3 cloves Garlic, minced For a strong flavor kick.
  • 1 cup Heavy cream Creates the luscious sauce.
  • 1 cup Parmesan cheese, freshly grated For a nutty finish.
  • 1/2 tsp Red pepper flakes For a hint of heat.
  • 2 cups Baby spinach Adds freshness and color.
  • 2 tbsp Olive oil For sautéing.
  • to taste Salt and pepper For seasoning.
  • 1/4 cup Parsley, fresh, for garnishing Adds color and flavor.

Instructions

Preparation

  • In a large pot of salted boiling water, cook your pasta according to package instructions until al dente. Reserve about a cup of pasta water when draining.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Toss in the shrimp and season with salt, pepper, and red pepper flakes. Cook until the shrimp turns pink and opaque, around 3-4 minutes. Remove shrimp and set aside.
  • In the same skillet, pour in the heavy cream and bring to a simmer. Gradually stir in the Parmesan cheese until melted and creamy. If it’s too thick, add a bit of reserved pasta water to reach your preferred sauce consistency.
  • Add the cooked pasta, shrimp, and baby spinach to the skillet. Toss to coat everything evenly in the sauce. Let it cook for another minute or two until the spinach wilts.
  • Remove from heat and sprinkle fresh parsley for garnish. Serve immediately.

Notes

Use fresh ingredients for best flavor. Adjust spiciness by modifying red pepper flakes. Customize with seasonal vegetables like asparagus or bell peppers. For a richer sauce, add more cheese or white wine.
