  • 1 pound Shrimp (peeled and deveined) Opt for wild-caught for better flavor.
  • 8 ounces Fettuccine Can substitute with linguine or spaghetti.
  • 3 cloves Garlic (minced)
  • 1 cup Heavy cream Substitute with half-and-half for a lighter version.
  • 1/2 cup Sun-dried tomatoes Chopped.
  • 1/2 cup Parmesan cheese (grated) Use fresh for the best flavor.
  • to taste Salt Season generously.
  • to taste Pepper Freshly ground preferred.
  • 2 tablespoons Olive oil For cooking.
  • for garnish Parsley Chopped.

Preparation

  • Begin by measuring out your pasta, rinsing and deveining the shrimp, and chopping the sun-dried tomatoes.

Cooking

  • In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve a cup of pasta water, drain the rest, and set aside.
  • In a large skillet over medium heat, add olive oil. Once heated, toss in the shrimp, seasoning with salt and pepper. Sear for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add more olive oil if necessary, and sauté minced garlic until fragrant. Pour in the heavy cream, allowing it to bubble gently. Stir in the sun-dried tomatoes and bring it to a light simmer.
  • Return the shrimp to the skillet and add the cooked fettuccine. Mix everything together, adding reserved pasta water as needed to achieve your desired consistency.
  • Stir in the grated Parmesan cheese. Adjust the seasoning if needed with more salt and pepper.
  • Plate your Marry Me Shrimp Pasta, topping it off with a sprinkle of fresh parsley for a burst of color.

Notes

Store leftovers in an airtight container in the fridge. Best consumed within 2-3 days. Reheat gently on the stove, adding a splash of cream or water to restore its creaminess.
