Ingredients

  • 2 ripe bananas mashed
  • cup melted butter or oil
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • Dry Ingredients:
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Fun Add-Ins:
  • ¼ cup rainbow sprinkles
  • Optional Toppings:
  • Cream cheese glaze
  • Powdered sugar
  • Extra sprinkles

Instructions
 

  • Preheat oven to 350°F (175°C) and grease or line a mini muffin tin.
  • In a bowl, mash bananas until smooth. Add melted butter, sugar, egg, and vanilla, and mix well.
  • In another bowl, whisk together flour, baking soda, baking powder, and salt.
  • Add dry ingredients to wet ingredients and stir until just combined.
  • Gently fold in sprinkles.
  • Fill mini muffin cups about ¾ full.
  • Bake for 10–12 minutes until a toothpick inserted comes out clean.
  • Let cool slightly, then add optional toppings and serve.

Notes

  • Use very ripe bananas for best flavor and sweetness.
  • Do not overmix the batter to keep muffins soft.
  • Fold sprinkles gently to prevent color bleeding.
