M&M Ice Cream Cookie Sandwiches
Delightful M&M Ice Cream Cookie Sandwiches are the perfect treat for any occasion, combining soft cookies with your favorite ice cream for a refreshing and customizable dessert.
Ingredients
For the Cookies
- 1 cup unsalted butter, softened Ensure butter is at room temperature.
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour Sifted before measuring.
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup M&M candies Plus more for decoration.
For the Ice Cream Layer
- 1 quart your favorite ice cream Flavors like vanilla or chocolate chip work well.
Instructions
Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add in the egg and vanilla extract, mixing until smooth.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture, stirring until just combined.
- Fold in the M&M candies.
- Shape the cookies by scooping a tablespoon of dough onto a lined baking sheet. Allow space between each scoop, flattening slightly with the back of a spoon.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Assembly
- Once the cookies are fully cooled, take a generous scoop of ice cream and place it between two cookies, pressing gently to create a sandwich.
- For an extra touch, roll the edges in more M&M candies.
Freezing
- Place the assembled sandwiches back in the freezer for at least an hour to firm up.
Notes
Chill the dough if it feels too soft. Experiment with different ice cream flavors or add-ins for a unique touch.
