Ingredients
  

  • Dry Ingredients:
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • Wet Ingredients:
  • 3 large overripe bananas mashed
  • ½ cup melted butter or oil
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup yogurt or sour cream optional but adds moisture
  • Optional Add-Ins:
  • ½ cup chopped walnuts or pecans
  • ½ cup chocolate chips
  • 1 tsp cinnamon

Instructions
 

  • Step 1 – Prep the Pan
  • Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan with parchment paper.
  • Step 2 – Mix Wet Ingredients
  • In a large bowl, mash bananas until smooth. Add melted butter, brown sugar, eggs, vanilla, and yogurt (if using). Whisk until creamy and well blended.
  • Step 3 – Add Dry Ingredients
  • In a separate bowl, whisk flour, baking soda, and salt. Gently fold dry mixture into the wet batter until just combined — don’t overmix.
  • Step 4 – Bake
  • Pour batter into the prepared pan, smooth the top, and bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Step 5 – Cool & Serve
  • Let cool in the pan for 10–15 minutes, then transfer to a rack. Slice, serve, and enjoy warm or at room temperature.

Notes

  • Use overripe bananas with brown spots for best flavor.
  • Don’t overmix — it makes the bread dense.
  • Tent with foil halfway if the top browns too quickly.
