- Dry Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- Wet Ingredients:
- 3 large overripe bananas mashed
- ½ cup melted butter or oil
- ¾ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup yogurt or sour cream optional but adds moisture
- Optional Add-Ins:
- ½ cup chopped walnuts or pecans
- ½ cup chocolate chips
- 1 tsp cinnamon
Step 1 – Prep the Pan
Preheat oven to 350°F (175°C). Grease or line a 9x5-inch loaf pan with parchment paper.
Step 2 – Mix Wet Ingredients
In a large bowl, mash bananas until smooth. Add melted butter, brown sugar, eggs, vanilla, and yogurt (if using). Whisk until creamy and well blended.
Step 3 – Add Dry Ingredients
In a separate bowl, whisk flour, baking soda, and salt. Gently fold dry mixture into the wet batter until just combined — don’t overmix.
Step 4 – Bake
Pour batter into the prepared pan, smooth the top, and bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.
Step 5 – Cool & Serve
Let cool in the pan for 10–15 minutes, then transfer to a rack. Slice, serve, and enjoy warm or at room temperature.
-
Use overripe bananas with brown spots for best flavor.
-
Don’t overmix — it makes the bread dense.
-
Tent with foil halfway if the top browns too quickly.
-
Mix in chocolate chips or nuts for extra texture.
