  • 1 pound ground beef (or turkey) for a healthier option
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped red or green
  • 1 14 oz can diced tomatoes with green chilies, undrained
  • 2 cups chicken or vegetable broth
  • 1 cup uncooked pasta penne or rotini work best
  • 1 packet taco seasoning
  • 1 cup corn canned or frozen
  • 1 cup shredded cheese cheddar or Mexican blend
  • to taste salt and pepper
  • for garnish fresh cilantro, chopped

Preparation

  • In a large pot over medium heat, cook the ground beef until browned. Break it apart as it cooks to ensure even browning. Drain any excess fat.
  • Add the diced onion, garlic, and bell pepper to the pot. Sauté for about 3-4 minutes until the vegetables are softened.
  • Stir in the diced tomatoes with their juices, broth, taco seasoning, corn, and uncooked pasta. Bring the mixture to a gentle boil.
  • Once boiling, reduce the heat to low, cover, and let it simmer for about 12-15 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
  • Once the pasta is cooked, remove the pot from heat and stir in the shredded cheese until it melts into a creamy, cheesy goodness.
  • Dish out the taco pasta into bowls and garnish with fresh cilantro. Enjoy it hot!

Notes

For extra nutrition, consider adding spinach or black beans. You can also prepare this meal in advance and reheat it for an easy lunch or dinner.
