Ingredients
  

  • Bread
  • 1 ½ cups grated zucchini
  • 1 ¾ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 tablespoons fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • ½ teaspoon orange zest

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease or line a 9×5 inch loaf pan with parchment paper.
  • Wash and grate the zucchini using a box grater. Do not squeeze out all the moisture.
  • In a large bowl, whisk together the eggs, sugar, vegetable oil, vanilla extract, orange juice, and orange zest until smooth.
  • Stir the grated zucchini into the mixture.
  • In another bowl, combine the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • To make the glaze, mix powdered sugar, orange juice, and orange zest until smooth.
  • Drizzle the glaze over the cooled bread before slicing and serving.

Notes

  • Do not overmix the batter to keep the bread soft and tender.
  • Use fresh orange zest for the best citrus flavor.
  • Allow the bread to cool completely before adding the glaze so it sets properly.
  • If the top browns too quickly during baking, loosely cover the loaf with foil.
