Ingredients
  

  • 1 medium head green cabbage or red cabbage for color
  • 3 tablespoons olive oil or melted butter
  • 3 cloves garlic minced or crushed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika optional, for color
  • Fresh parsley thyme, or rosemary for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • Prep cabbage: Remove wilted outer leaves, rinse, and pat dry.
  • Slice: Cut cabbage into 1-inch-thick rounds, keeping the core intact so slices hold together.
  • Season: In a small bowl, whisk olive oil, garlic, salt, pepper, and paprika. Brush both sides of each slice generously.
  • Roast: Arrange cabbage steaks on the baking sheet in a single layer. Roast 25–30 minutes, flipping halfway, until edges are golden and crisp.
  • Serve: Sprinkle with fresh herbs and serve hot.

Notes

  • For extra crispiness, roast a few minutes longer.
  • Avoid crowding the pan — give each slice space to brown.
  • Add lemon juice, grated Parmesan, or crushed red pepper for variety.
  • Store leftovers in an airtight container up to 4 days; reheat at 350°F for 10–12 minutes.
