For the Champagne Vinaigrette

  • 1/4 cup champagne vinegar
  • 1/2 cup olive oil
  • 1/2 tbsp Dijon mustard
  • 2 tsp honey
  • 1/2 tsp minced garlic

Notes

Choose ripe peaches for optimal sweetness. For a different texture, add nuts or seeds. Keep dressing separate until ready to serve to prevent sogginess.
