  • 2 cups diced and peeled peaches (fresh or frozen)
  • ½ cup sugar adjust based on the sweetness of peaches
  • 1 tsp cinnamon for flavor
  • a pinch nutmeg adds depth
  • 1 tbsp lemon juice to enhance flavor
  • 2 tbsp cornstarch optional, for thickening the filling

Wrapping Ingredients

  • 10-12 pieces egg roll wrappers available in most grocery stores
  • as needed cups oil for frying (vegetable or canola)

Preparation of Filling

  • In a medium bowl, combine the diced peaches, sugar, cinnamon, nutmeg, and lemon juice. If desired, add cornstarch for a thicker filling and mix well.

Assembling Egg Rolls

  • Moisten the edges of the wrapper with water using your fingers. Fold the bottom corner over the filling, then fold in the sides and roll upwards to seal completely. Repeat until all filling is used.

Frying the Egg Rolls

  • In a frying pan, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
  • Carefully place a few egg rolls in the oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes per side or until golden brown.
  • Use a slotted spoon to remove the egg rolls and place them on paper towels to drain any excess oil.

Serving The Dish

  • Dust your egg rolls with powdered sugar and serve them warm. A scoop of vanilla ice cream on the side is recommended to elevate the dessert.

Notes

Consider adding cream cheese to the peach mixture for a thicker filling. For a healthier option, brush the rolled egg rolls with melted butter and bake at 400°F (200°C) for about 20 minutes, flipping halfway through.
