- * 4 cups mixed greens arugula, spinach, or spring mix
- * 2–3 ripe peaches sliced
- * ½ cup cucumber sliced
- * ¼ cup red onion thinly sliced
- * 3 tablespoons olive oil
- * 1 tablespoon balsamic vinegar
- * 1 tablespoon honey
- * 1 teaspoon Dijon mustard
- * Salt and pepper to taste
- * ½ cup crumbled feta or goat cheese
- * Optional: toasted nuts pecans, almonds, walnuts, grilled chicken or shrimp
Wash and dry the greens thoroughly.
Slice peaches, cucumber, and red onion.
In a small bowl, whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
