Ingredients
  

  • * 4 cups mixed greens arugula, spinach, or spring mix
  • * 2–3 ripe peaches sliced
  • * ½ cup cucumber sliced
  • * ¼ cup red onion thinly sliced
  • * 3 tablespoons olive oil
  • * 1 tablespoon balsamic vinegar
  • * 1 tablespoon honey
  • * 1 teaspoon Dijon mustard
  • * Salt and pepper to taste
  • * ½ cup crumbled feta or goat cheese
  • * Optional: toasted nuts pecans, almonds, walnuts, grilled chicken or shrimp

Instructions
 

  • Wash and dry the greens thoroughly.
  • Slice peaches, cucumber, and red onion.
  • In a small bowl, whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
  • Add greens to a large bowl.
  • Top with peaches, cucumber, and onion.
  • Sprinkle cheese and nuts over the salad.
  • Drizzle dressing evenly.
  • Toss gently to combine.
  • Serve immediately.

  • Use ripe but firm peaches for best texture.
  • Add dressing gradually to avoid overdressing.
