Ingredients
  

  • Bread sourdough, ciabatta, or sturdy sandwich bread
  • 2 tablespoons butter softened
  • 2–3 tablespoons pesto homemade or store-bought
  • 4–6 ounces cheese mozzarella, provolone, or blend
  • Optional add-ins: tomato slices baby spinach, cooked chicken or turkey

Instructions
 

  • Preheat a non-stick skillet over medium heat.
  • Spread butter on the outside of each bread slice and pesto on the inside.
  • Layer cheese and optional add-ins between the slices.
  • Place the sandwich in the skillet, butter side down. Cook 3–4 minutes per side until golden brown and cheese is melted.
  • Let rest 1 minute before slicing diagonally. Serve warm.

Notes

  • Use medium-low heat so the cheese melts before the bread browns too quickly.
  • Adjust pesto amount to taste a little goes a long way.
  • For extra flavor, try adding a drizzle of balsamic glaze or a mix of cheeses.
