- Bread sourdough, ciabatta, or sturdy sandwich bread
- 2 tablespoons butter softened
- 2–3 tablespoons pesto homemade or store-bought
- 4–6 ounces cheese mozzarella, provolone, or blend
- Optional add-ins: tomato slices baby spinach, cooked chicken or turkey
Preheat a non-stick skillet over medium heat.
Spread butter on the outside of each bread slice and pesto on the inside.

Place the sandwich in the skillet, butter side down. Cook 3–4 minutes per side until golden brown and cheese is melted.
Let rest 1 minute before slicing diagonally. Serve warm.
-
Use medium-low heat so the cheese melts before the bread browns too quickly.
-
Adjust pesto amount to taste a little goes a long way.
-
For extra flavor, try adding a drizzle of balsamic glaze or a mix of cheeses.
