In a separate bowl, combine eggs, buttermilk, oil or melted butter, vanilla extract, and red food coloring.

Step 2 — Cook the Pancakes
Preheat a non-stick pan or griddle over medium heat.
Lightly grease with butter or oil.
Pour ¼ cup batter per pancake onto the pan.

Flip carefully and cook another 1–2 minutes until done.
Step 3 — Serve
Stack pancakes and drizzle generously with cream cheese glaze.
Top with berries, chocolate chips, or whipped cream as desired.
