- 1 can 15 oz chickpeas, drained and rinsed
- ¼ cup creamy peanut butter or cashew butter
- 3 tablespoons maple syrup or honey
- 2 tablespoons almond milk plus more if needed
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
- ½ teaspoon cinnamon
- 1 tablespoon date paste optional, for deeper caramel flavor
- Optional Toppings:
- Caramel drizzle
- Mini chocolate chips
- Crushed pretzels
- Extra sea salt
Prep
Drain and rinse chickpeas thoroughly.
Pat dry slightly for smoother texture.
Blend
Add chickpeas, nut butter, maple syrup, almond milk, vanilla, cinnamon, and salt to a food processor.
Blend for 1–2 minutes until smooth.
Scrape down sides and blend again.
If too thick, add almond milk 1 tablespoon at a time until creamy.
Adjust Flavor
Taste and adjust sweetness or salt as needed.
Blend again briefly if adjustments are made.
Serve
Spoon into a bowl.
Top with caramel drizzle, chocolate chips, or crushed pretzels if desired.
Serve chilled or at room temperature.
